A gennaio 2018, l&#8217;EFSA ha pubblicato un&#8217;opinione scientifica che evidenzia come queste forme esterificate si idrolizzano durante la digestione, producendo elevate quantit\u00e0 di MCPD tossici. L&#8217;EFSA e la JECFA hanno valutato i rischi associati, stabilendo soglie di assunzione giornaliera e sottolineando il maggiore rischio per gruppi vulnerabili come neonati e bambini.<\/p><p>Questo problema riguarda principalmente gli oli e i grassi vegetali, nonch\u00e9 i prodotti derivati come i prodotti da forno.
